Aspergillus oryzae is a fungus widely utilized in fermentation industries, including soy sauce and sake, and may sensitize individuals to proteins produced, leading to type 1 hypersensitivity reactions upon exposure. Gastrointestinal (GI) symptoms, cutaneous symptoms such as itching and hives, and severe manifestations like anaphylaxis are seen. Healthcare providers use this test to determine allergic status and guide allergen-specific immunotherapy.
